Mixed Greens with Sun-Dried Tomato Dressing-1/4 cup
Soymilk-2 tbsp
Rosemary-Fresh-5/8 tsp
Basil Fresh-1/4 tbsp, chopped
Thyme/Fresh-0.60 grams
Tomatoes-1/4 medium whole (2-3/5″ dia)
Scallions-1/8 cup, chopped
Mixed Baby Greens(Kale, Chard, Spinach)-70.9 grams
Arugula Raw-2 tbsp
Lemons-1/4 fruit without seeds
Garlic-1/4 clove
Brazilnuts(Nuts, dried, unblanched)-1 kernel(5 grams)
Step 1
Soak the sun-dried tomatoes in the soy milk for an hour.
Step 2
Chop the fresh herbs, tomato, and onions and toss them with the salad greens. Add additional veggies as desired.
Step 3
Juice the lemon and combine in a high-powered blender with the sun dried tomato mixture and garlic until smooth. Pour over salad and toss together well. Top with brazil nuts and enjoy!
